It's Canning Season!

This week I have been busily trying to preserve food in jars and move things out of my freezer. I have a long way to go.....😧 That's a good thing though! That means that my gardens have been more than productive over the growing season.


Yesterday I removed several bags of frozen tomatoes out of the freezer and began making pasta sauce. It's somewhat laborious, but I must admit that it sure is nice to have my own homemade pasta sauce on hand especially when I need a quick meal. The taste is SO much better than store bought.....not that I'm bragging!😜


I also made blackberry jam this week. That is a first for me. I have made several jams in the past using a combination of blackberries and other berries, but never just straight blackberry. I've already sampled it. What a treat!! Another first for me this week was trying my hand at making Pepper Jam. Kind of like the Cowboy Candy I made a few weeks ago, the pepper jam needs a little time to cure, so I'm not sure how it turned out. I'm keeping my fingers crossed.....🤞 I used mostly red sweet pepper's and then added a few jalapeno peppers to give it a little kick. I then added several cups of sugar. This is NOT a low calorie food!


I will be sure to let you know how it turned out in the coming weeks. I still haven't tasted the cowboy candy. It continues to cure. Maybe I will open them up in a few weeks and try the new pepper jam recipe at the same time. Talk about a sugar explosion! Oh well, I'll just plan to spend some extra time on the elliptical that day....eat happy! 😁
