Fresh Strawberry Pie

Thank you to everyone who sent out nice messages regarding our sweet dog Mindy. They were very special to us. Last week I mentioned the goodness of comfort food. I made a pie using fresh strawberries that really hit the spot! It was super easy and didn't take too long to pull together which is really helpful to me right now. If you like or have ever tried the strawberry pie that is served at Shoney's or Frisch's Big Boy then you are in for a big treat! This one is very similar, (it might even be better) I'll let you decide.




Fresh Strawberry Pie


6 cups strawberries, hulled

3/4 cup sugar

3 Tablespoons cornstarch

1/2 cup of water

(1) 9 inch pie crust, baked






  1. Bake your pie crust first and then set it aside to cool.

  2. Measure out one cup of the strawberries and mash them with a fork until they are almost pureed.

  3. In a small saucepan, whisk together the sugar and the cornstarch. Stir in the water and the mashed strawberries.

  4. Bring the mixture to a boil over medium temperature, stirring constantly. Continue boiling and stirring for 3 minutes until the mixture becomes thick.

  5. Set it aside and allow it to cool for ten minutes.

  6. While the mashed strawberries cool, begin slicing the hulled strawberries in half. (they can be cut into smaller pieces if you prefer)

  7. Arrange the sliced strawberries in the bottom and edges of the baked pie crust. Layer them on top of one another until the remaining 5 cups are used.

  8. Spoon the strawberry glaze over the sliced strawberries until they are all completely covered or coated.

  9. Now comes the hard part! Chill the pie in the fridge for two to three hours or until set.

You can serve the pie as is, or you can top it with whipped cream to dress it up.
