Preserving the Harvest

This week has brought the same drudgery as last week.....cleaning out the strawberry beds. (note to self....don't let them get this out of control again. 😒) The good news is they are almost finished. They are greatly improved so hopefully next spring they will bring forth an abundance of juicy sweet strawberries. 🙏🤞


I've had several projects this week in addition to the strawberry beds. I've been preserving food for the late fall and winter months. I have blanched and put back in the freezer several bags of summer squash. I've also made 2 batches of jam, Blackberry and strawberry/raspberry. My supply of jam was beginning to diminish so I needed to break out the electric canner and get started. Hopefully in the next few days I will have made even more. The peach trees are dropping beautiful ripe peaches. Maybe I will try a new recipe.....some kind of a peachy/berry jam. That sounds really good! 😋


A few days ago I made a new zucchini recipe. I had trouble finding one that I liked so I made up my own using ingredients that most people have on hand. In this recipe I used Long White Zucchini, one of the varieties that I've been growing here on the farm. It turned out really tasty! I was very pleased with the results. However, dark green zucchini will work just as nicely. I will include a picture of the Long White Zucchini so that you will understand what it is for those who are unfamiliar.

 

Easy Cheesy Zucchini Casserole

3 pounds of sliced zucchini (boiled until tender)

1/3 cup Miracle Whip

2 oz Cream Cheese

1 can Cream of Mushroom soup

1 sleeve Ritz Crackers, crushed into crumbs

2 Tablespoons of butter

Salt and Pepper to taste

About 2 cups of grated cheese for the topping (I used a cheese blend, but use whatever you prefer)


Preheat the oven to 350 degrees. Slice Zucchini in rounds and boil for 5 to 10 minutes or until it is tender. Drain. Add the remaining ingredients stirring until well combined. Top with the cheese of your choice and bake for 25 to 30 minutes or until golden and bubbly.

 

Several weeks ago I promised an update on the dogs. We were very concerned for a while because Meghan was having a hard time adjusting to the new puppy. I am very happy to report that she finally likes her! (the puppy ALWAYS liked Meghan)😂 Meghan was just unsure of the puppy. 😆 They are the best of friends now and enjoy playing daily with each other. Their favorite game is chasing each other around the small tree we have in the front yard. Meghan is still protective of some of her special toys, but she has decided to share a few of them with Morgan Elizabeth. We will take success anywhere we can find it! More updates to come.....
